Ryed-Chai
1.5 oz J. Henry & Sons Four Grain Rye
.5 oz Chai simple syrup
3 dashes Blackstrap bitters
Rim glass with orange and dip in cinnamon-sugar mix.
Combine all ingredients into shaker with ice.
Shake & strain into glass
Top with 1 oz seltzer
Garnish: cinnamon stick

Chai Simple Syrup
2 C granulated sugar
2 C water
10 cinnamon sticks
10 chai tea bags
Place all ingredients in a small saucepan over medium heat.
Bring to a low boil, stirring occasionally, until the sugar has dissolved and mixture has thickened.
Strain the syrup with fine mesh strainer to separate the solids. Store in airtight container in fridge for several weeks (separation will occur – shake before use).
