J. Henry Gingerbread Old Fashioned

1.5 oz J. Henry Four Grain Rye
.75 oz Gingerbread simple syrup
3 dashes Blackstrap bitters
- Combine all ingredients into mixing glass w/ ice & stir. 
- Strain over large ice block. 
- Garnish: orange peel, rim glass, twist to express oils into drink and drop in.

Gingerbread Simple Syrup
1 C water
1 C fresh ginger, peeled & cut into 1” cubes
2/3 C packed dark brown sugar
1/3 C unsulfured molasses, not blackstrap variety
1 tsp fresh orange zest
1 tsp ground cinnamon
¼ tsp ground cloves
¼ ground allspice
1 tsp vanilla extract
- In a small saucepan, add water, ginger, dark brown sugar, molasses, orange zest, cinnamon, cloves and allspice. Stir to combine. Over medium-high heat, bring to a boil. Stir every so often to help dissolve the sugar. 
- When the mixture boils and sugar dissolves, turn off the heat and stir in vanilla extract. Allow to steep for at least 15 minutes. 
- Strain the syrup with fine mesh strainer to separate the solids. Store in airtight container in fridge for several weeks (separation will occur – shake before use).
