J. Henry Gingerbread Old Fashioned

1.5 oz J. Henry Four Grain Rye
.75 oz Gingerbread simple syrup
3 dashes Blackstrap bitters
Combine all ingredients into mixing glass w/ ice & stir.
Strain over large ice block.
Garnish: orange peel, rim glass, twist to express oils into drink and drop in.

Gingerbread Simple Syrup
1 C water
1 C fresh ginger, peeled & cut into 1” cubes
2/3 C packed dark brown sugar
1/3 C unsulfured molasses, not blackstrap variety
1 tsp fresh orange zest
1 tsp ground cinnamon
¼ tsp ground cloves
¼ ground allspice
1 tsp vanilla extract
In a small saucepan, add water, ginger, dark brown sugar, molasses, orange zest, cinnamon, cloves and allspice. Stir to combine. Over medium-high heat, bring to a boil. Stir every so often to help dissolve the sugar.
When the mixture boils and sugar dissolves, turn off the heat and stir in vanilla extract. Allow to steep for at least 15 minutes.
Strain the syrup with fine mesh strainer to separate the solids. Store in airtight container in fridge for several weeks (separation will occur – shake before use).
