1.5 oz J. Henry & Sons Four Grain Rye

1 oz Sweet Potato Simple (see recipe below)

3 Dashes of Bittercube Jamaican #1 Bitters

  • Combine all ingredients into shaker with ice.

  • Shake & Strain into glass.

  • Garnish: impale a marshmallow with cinnamon stick, toast marshmallow allowing cinnamon stick to smoke as well, drop on top of drink/rock

  • Reward Yourself!

Sweet Potato Simple Syrup

1 Small sweet potato

1 cup Sugar

1 cup Water

Bittercube Jamaican #1 Bitters

  • Take one small sweet potato, cut in half, stab a few times with a fork, and bake at 400 for about 45 minutes to an hour. You want to see it oozing and starting to caramelize, add water as needed so nothing burns.

  • As the sweet potatoes are beginning to finish up, begin your simple syrup of 1 cup of water to 1 cup of sugar. This is the ratio used per one small sweet potato. If you're using a larger one, estimate to your best ability (one large yam I cut up into five pieces that were about the size of a small sweet potato and used the same ratio of one cup of water to one cup of sugar to one small sweet potato, for example, 5 sweet potato pieces to 5c water to 5c sugar, 20 ).

  • Once the simple syrup begins to simmer, add peeled sweet potatoes and muddle into the simple syrup.

  • Add 4-5 dashes of Jamaican #1 bitters per small sweet potato.

  • Bring to a boil until the color changes to a light brown about 3-5 min.

  • For best consistency of syrup, blend the sweet potato mash/simple syrup mixture (be careful, it's hot) in a blender.

  • A food processor can work too, but the syrup will be slightly thicker, it's most likely to pour out of a speed pourer.

  • Refrigerate between use. Will keep for 2 weeks
