Aged to Perfection: A Bourbon & Cheese Excursion

Gain a deeper appreciation of two of the finer things in life: handcrafted bourbon and expertly made cheese.

$195 per cheese lover includes transportation by coach bus for the tour is provided, departing from and returning to the AC Hotel, sensory class, tour with bourbon & cheese pairing by owner Liz Henry & lunch by award winning Chef Dan Fox.

In pursuit of sensory knowledge, our morning will start at the Center for Dairy Research at the University of Wisconsin-Madison. There we will attend a sensory evaluation course to learn about how flavors, smells, textures, and more enhance the distinct qualities of cheese.

Then we’re off to J. Henry & Sons Bourbon in Dane, WI, to put this newfound sensory knowledge to the test. Guests will tour the associated farm to hear how they use their heirloom grains to make award-winning spirits. We’ll sit down to a tasting of bourbon and cheese directed by J. Henry partner, Liz Henry, accompanied by a lineup of cheese all-stars.

Last, but definitely not least, a four-course lunch will be served, courtesy of James Beard Award-nominated executive chef and owner of Madison’s Heritage Tavern, Daniel Fox. The cheeses and bourbon will accompany Fox’s upscale farm-to-table cuisine incorporating Wisconsin’s finest ingredients with global inspiration and culinary excellence.
